| | I have similar recipe that I just made last night...flourless too, which is great for cookie exchanges, etc. Probably not the "healthiest" cookies...but hey, I only really make em during the holidays!
1 cup packed brown sugar
1 cup creamy peanut butter
1 large egg
1 tsp baking soda
1/2 cup semi-sweet chocolate chips.
Preheat oven to 350. Mix all ingredients except chocolate chips, until thoroughly mixed. Add chocolate chips. Drop rounded teaspoonfuls on ungreased cookie sheet. Bake for about 9 minutes, or until puffed and slightly golden. Cool on sheet for 5 minutes on cooling rack, then remove from sheet and cool completely on rack. |

| | Is there an easier way to measure out the peanut butter besides putting it in a measuring cup?

| | Just made the original posted recipe today, with Liza's modifications. I am not a baker and they were so easy. My kid has already eaten most of them. Prep and clean up is a breeze!
I'm going to try Lisa's next time. Quote:

| | Easier than going to the store, right Kim? I think you could eyeball the peanut butter once you know what the measurement should look like. |

| | Doh! Just repeated what ^ she said.
Original recipe was a little dry for me, too crumbly after baking, tastey but dry, so I will try Lisa's and see how that goes. |

| | I tried Lisa's recipe this weekend and the addition of the chocolate chips is really good. My peanut butter eyeballing was a little off though, so they were EXTRA peanut buttery! The kid still ate the whole batch in less than 2 days. |

| | Yes, Jess, if you use natural peanut butter, you should be ok with the original sugar amount. I suggested cutting it down by a lot if you use regular peanut butter. |

| | MMM these sound so good. I want to make them but only have sunflower seed butter. Think that would work?

| | It's a bit runnier so maybe would need some flour?

| | That would work, I think...it's interesting though, I first used this recipe because it was flourless! |

| | Oh shoot. Now I'm going back downstairs to bake these. I shouldn't have opened this thread up when I had a sugar craving...
I'm going to try it with 1/2 cup of sugar, 1/4 brown sugar, 1 egg, peanut butter, and baking soda. I don't have chocolate chips
